Valentine’s Day has always been an extra special day to me because I LOVE celebrating LOVE. Sending a token of affection to your special someone or to the person who warms your heart and makes your world a better place is what I love about Valentine’s Day. I truly believe seeing the look on the face of your loved one when they open up a present that truly touches them is the greatest gift of them all. I know these times have been challenging for us all and I don’t want you to think that the only way to celebrate and cherish love is with your credit card. No way! There is nothing more expensive in the world than your time and affection.
Giving the gift of kindness to those around us has been something that I’ve been focused on not only today, but everyday. If I can do something that makes someone’s day a little brighter or if I can ease the burden of someone doing important work in making the world a better place then I feel better at the end of the day. And, I think if enough of us can do that together then this community can bring some positive good to the world around us!

1.) My Famous 3 Ingredient (sort of) Healthy Breakfast Cookies
Make a simple recipe that has only 3 ingredients!
2 ripe banans
1 1/2 cups of rolled oats (I prefer organic gluten free but any will work.)
1/2 cup of chocolate chips (cacao, semi sweet or milk chocolate or raisins or dates)
Instructions: Mask 2 bananas in bowl fold in the rolled oats for gooey cookies let sit so that the oats absorb fully into bananas add in chocolate chips and place on parchment lined cookie sheet. Bake for 12-15 minutes on a 350 degree oven. Enjoy!
***Additional tips which I always add ;) add splash of vanilla, splash of almond milk, sprinkle of cinnamon, a teaspoon of ground flax seeds, 2 dates and before putting in oven top the cookies off with sea salt…then bake. YUMMY YUMMY YUMMY
